There is a subtle difference in the configuration of workflows between Features and Tasks.  In the Features security, I can remove the ability for users to "edit" an item.

Ah, that is true.  While workflows function exactly the same between features and tasks, the way that you control access to the workflow level is different.  You are corrrect.

This sounds like a minor thing, but it makes sure that the workflow requirements and visibility are correctly followed.

No, this is not a minor thing.  I stand corrected. 

I would recommend to anyone else though that if they plan to rename features to something, don't call them tasks.

Very, very, good point.  That naming convention is very important.
